Granite Transformations’ Recipe of the Month

Ingredients
4 medium sweet potatoes, peeled and cut into 1/2“
[1.25 cm] thick rounds
3 tablespoons [45 ml] olive oil
5 large garlic cloves, pressed or minced
1/3 cup [80 ml] fresh thyme leaves (plus sprigs for garnish)
1 teaspoon [5 ml] kosher salt
1/2 teaspoon [3 ml] hot red pepper flakes
Preheat the oven to 450 F [230 C].
In a large mixing bowl, whisk together all the ingredients and toss with the sweet potatoes.
Arrange the potato slices in a single layer on a heavy baking sheet.
Place on a rack in the top half of the oven and roast until tender and slightly browned, about thirty five minutes. Pierce a thick slice to be sure they’re ready.
Serve warm or at room temperature.
